The avocado berry salad my way

Hey guys! On Monday I had a day off, which is quite rare for me, so I decided to make something good as, for once, I had time. I spotted this recipe on my laptop's MSN application, which pops up on the start screen. It's called the Anti-aging avocado berry salad with mango vinaigrette. The salad inspired me with its cool combination of contrasting flavours, so I modified the recipe just a bit to meet my needs and came up with this delicious salad. It's super easy (well, it is only a salad...) and really tasty!


This is what you'll need:



1. First you'll have to clean the berries by putting them in boiling hot water for 2-3 minutes. Having done that, pour the water away using the help of a colander and leave the berries to dry and cool down on a piece of paper towel.

2. Chop the mango and avocados. Rip the lettuce into small pieces.



3. Use a drop of oil and roast the pine nuts until golden. Stir them continuously so that they won't burn. Then place them aside to cool down for a while.

4. Pour all the ingredients for the mango vinaigrette into a blender and blend until smooth. I didn't do a very good job mixing the vinaigrette, so I strained it after the blending. You can do this as well, but it could take quite a lot of time!

5. Make sure the berries and pine nuts aren't warm anymore and mix everything together! It's best to leave the mango vinaigrette in a separate little jug, just in case it happens to taste too strong.

This salad serves about 4-6 persons, depending on how much you're going to eat salad. Happy cooking! :) Here's the link to the original post.
